DESCRIPTION

Street Corn is a classic Mexican-inspired side dish featuring sweet corn coated in a creamy, flavorful blend of mayonnaise, butter, fresh lime, and Spicelopedia® Chili Lime Adobo Seasoning. Each corn cob is seasoned with a bold combination of citrus, chile, and savory spices, creating the perfect balance of tangy, smoky, and slightly spicy flavors. INGREDIENTS

Approx. Yield: 50x half cobs
Corn cobs, halved 25 whole cobs / 50 halves
Butter, melted ½ lb.
Mayonnaise 1 lb.
Spicelopedia® Chile Lime Adobo seasoning ½ cup
Lime juice (spray bottle) For topping (~2 oz.)

STEPS

  1. Boil corn cobs for 5 minutes, then remove and drain very well.
  2. Let sit for 5 minutes to allow excess water to drip off.
  3. Brush each cob with melted butter, then generously coat with mayonnaise all around.
  4. Place cobs onto a large baking sheet. Spray with half of the lime juice, then season with half of the spice blend.
  5. Flip cobs over and repeat on the other side with remaining lime juice and seasoning.
  6. Serve hot.
