Shrimp Pomodoro Rustica 

 

INGREDIENTS

Approx. Yield: 1 entree
Shrimp, peeled, deveined, tail-off (21/25) 5 shrimp (4–5 oz.)
Spicelopedia’s Italian Lemon Pepper 2 tsp
Marinara 8 oz.
Cherry tomatoes, halved 10 halves (or 5 whole)
Fresh basil, torn 2 leaves
Linguini, cooked 8 oz.
Shaved parmesan For garnish

STEPS

  1. Toss shrimp with seasoning and add to a greased pan over medium heat.
  2. Cook for 2 minutes, flip, and cook for 1 more minute. Remove from heat once shrimp are completely pink.
  3. In the same pan, add tomatoes and cook over medium-high heat. Sauté for 2 minutes.
  4. Add marinara sauce, mix to combine, and bring center to a boil. Add shrimp back in and toss.
  5. Place pasta into a strainer and reheat in hot water for 30 seconds. Strain very well.
  6. Add pasta to sauce and toss to coat. Bring edges to a simmer, then remove from heat.
  7. Add basil and toss to combine.
  8. Transfer to a serving dish, placing shrimp on top.
