Shrimp Pomodoro Rustica
INGREDIENTS
Approx. Yield: 1 entree| Shrimp, peeled, deveined, tail-off (21/25) | 5 shrimp (4–5 oz.) |
| Spicelopedia’s Italian Lemon Pepper | 2 tsp |
| Marinara | 8 oz. |
| Cherry tomatoes, halved | 10 halves (or 5 whole) |
| Fresh basil, torn | 2 leaves |
| Linguini, cooked | 8 oz. |
| Shaved parmesan | For garnish |
STEPS
- Toss shrimp with seasoning and add to a greased pan over medium heat.
- Cook for 2 minutes, flip, and cook for 1 more minute. Remove from heat once shrimp are completely pink.
- In the same pan, add tomatoes and cook over medium-high heat. Sauté for 2 minutes.
- Add marinara sauce, mix to combine, and bring center to a boil. Add shrimp back in and toss.
- Place pasta into a strainer and reheat in hot water for 30 seconds. Strain very well.
- Add pasta to sauce and toss to coat. Bring edges to a simmer, then remove from heat.
- Add basil and toss to combine.
- Transfer to a serving dish, placing shrimp on top.
