Beef Tenderloin

 

INGREDIENTS

Approx. Yield: 50 servings
Beef tenderloin 2 × 6 lb tenderloins
Olive oil ¼ cup
Spicelopedia’s Steak & Brisket seasoning ½ cup

STEPS

  1. Truss the tenderloins, then thoroughly season on all sides.
  2. Cover and refrigerate for 3 hours.
  3. Remove from the fridge and let rest at room temperature for 30 minutes before cooking.
  4. Heat olive oil in a large pan or hotel pan over medium-high heat. Sear both tenderloins for 3–4 minutes per side until browned all around.
  5. Transfer to a 425°F oven and cook until the internal temperature reaches 135°F (medium rare), about 30 minutes, or until desired doneness.
