Chicken Fajitas

DESCRIPTION

This Chicken Fajita recipe features tender strips of chicken breast roasted with onions and colorful bell peppers, then finished with fresh lime juice and Southwest Zesty Fiesta seasoning. The combination of savory chicken, roasted vegetables, and bright Southwest flavors creates a versatile entrée that works equally well in fajitas, tacos, bowls, and buffet-style menu applications.
 

INGREDIENTS

Approx. Yield: 1 entree
Spicelopedia® Southwest Zesty Fiesta Seasoning ½ cup + ½ cup
Chicken breast, thin sliced strips (½” x 3”) 15 lbs.
Canola oil ¼ cup + ¼ cup
Yellow onion (¼” slice) 5 lbs.
Red bell pepper (¼” slice) 4 lbs.
Green bell pepper (¼” slice) 4 lbs.
Lime juice (for drizzling) ~2 oz.

STEPS

  1. In a large mixing bowl, combine ½ cup seasoning with chicken and ¼ cup oil. Mix until fully combined.
  2. Place onto a large baking tray and into a convection oven at 400°F for 25 minutes.
  3. Meanwhile, combine remaining oil and seasoning with onion and bell peppers. Toss until fully combined and place onto a separate baking tray.
  4. After 25 minutes, remove chicken from oven. Flip and move chicken around on the tray.
  5. Place both chicken and vegetable trays into the oven.
  6. Chicken will finish in 5–10 minutes. Veggies will cook in 15–20 minutes.
  7. Once chicken reaches an internal temperature of 160°F, remove from oven.
  8. Toss vegetables after 15–20 minutes and continue cooking for an additional 3–5 minutes if needed.
  9. Remove from oven and combine chicken, vegetables, and lime juice.
  10. Transfer to serving platter and serve hot.
