Texas Shredder Beef Sandwich 

DESCRIPTION

The Texas Shredder Beef Sandwich features slow-braised beef seasoned with our Texas Steak & Brisket seasoning and cooked with pepperoncini, onions, beer, and beef broth until tender enough to shred. Rich, savory, and packed with bold Texas-style flavor, this hearty sandwich filling delivers the kind of slow-cooked comfort that works equally well for sandwiches, game-day menus, and casual dining applications.
 

INGREDIENTS

Approx. Yield: 50 servings
Beef tenderloin 15 lbs.
Pepperoncini (stems removed, juice reserved) 4 × 16 oz. jars
Spicelopedia® Steak & Brisket seasoning ½ cup
Lone Star beer 48 oz. (4 × 12 oz. cans)
White onion (½” slices) 2 lbs.
Beef broth 2 quarts
Hoagie buns 50 buns

STEPS

  1. Season beef and place onto a greased pan. Brown on all sides, about 3 minutes per side.
  2. Remove beef and place into a hotel pan.
  3. Add pepperoncini (with juice), Lone Star beer, onion, and beef broth to the hotel pan.
  4. Cover and place into a 350°F oven for 5 hours.
  5. Remove from oven and allow to rest for 45 minutes.
  6. Carefully shred beef using tongs.
  7. Serve shredded beef in its juices alongside hoagie buns.
