Sticky Bourbon Chicken Skewers

 

INGREDIENTS

Approx. Yield: 50 × 4 oz. skewers
Chicken thighs, 1” dice 12.5 lbs.
Spicelopedia BBQ Pork seasoning ½ cup + 2 TB
BBQ sauce (e.g., Sweet Baby Ray’s) 1 quart
Bourbon 1 cup

STEPS

  1. In a large mixing bowl, combine diced chicken with ½ cup seasoning. Mix thoroughly to coat evenly.
  2. Skewer 4 oz. of chicken onto each skewer. Set aside.
  3. In a pot, add bourbon and bring to a boil. Let simmer for 1 minute to cook off the alcohol.
  4. Add BBQ sauce and remaining 2 TB seasoning. Mix to combine, bring to a simmer, then remove from heat.
  5. Preheat grill to medium-high heat (375–425°F). Add skewers and cook for 2–3 minutes, or until they release easily from the grates. Flip and brush with BBQ sauce.
  6. Continue cooking, flipping and brushing with sauce as the chicken releases from the grill.
  7. Cook for an additional 2–3 minutes per side, or until fully cooked through.
