Sticky Bourbon Chicken Skewers
DESCRIPTION
Sticky Bourbon Chicken Skewers feature juicy chicken thighs seasoned with our Sweet & Smokey BBQ seasoning, grilled and brushed with a rich bourbon barbecue glaze. Sweet, smoky, and slightly tangy, these skewers deliver classic barbecue flavor in a handheld format that works well as an appetizer, entrée, or catering item.
INGREDIENTS
Approx. Yield: 50 × 4 oz. skewers| Chicken thighs, 1” dice | 12.5 lbs. |
| Spicelopedia® Sweet and Smokey BBQ seasoning | ½ cup + 2 TB |
| BBQ sauce (e.g., Sweet Baby Ray’s) | 1 quart |
| Bourbon | 1 cup |
STEPS
- In a large mixing bowl, combine diced chicken with ½ cup seasoning. Mix thoroughly to coat evenly.
- Skewer 4 oz. of chicken onto each skewer. Set aside.
- In a pot, add bourbon and bring to a boil. Let simmer for 1 minute to cook off the alcohol.
- Add BBQ sauce and remaining 2 TB seasoning. Mix to combine, bring to a simmer, then remove from heat.
- Preheat grill to medium-high heat (375–425°F). Add skewers and cook for 2–3 minutes, or until they release easily from the grates. Flip and brush with BBQ sauce.
- Continue cooking, flipping and brushing with sauce as the chicken releases from the grill.
- Cook for an additional 2–3 minutes per side, or until fully cooked through.
