Sticky Bourbon Chicken Skewers

STEPS
- In a large mixing bowl, combine diced chicken with ½ cup seasoning. Mix thoroughly to coat evenly.
- Skewer 4 oz. of chicken onto each skewer. Set aside.
- In a pot, add bourbon and bring to a boil. Let simmer for 1 minute to cook off the alcohol.
- Add BBQ sauce and remaining 2 TB seasoning. Mix to combine, bring to a simmer, then remove from heat.
- Preheat grill to medium-high heat (375–425°F). Add skewers and cook for 2–3 minutes, or until they release easily from the grates. Flip and brush with BBQ sauce.
- Continue cooking, flipping and brushing with sauce as the chicken releases from the grill.
- Cook for an additional 2–3 minutes per side, or until fully cooked through.
