Island Thyme Chicken Quarters
DESCRIPTION
Island Thyme Chicken Quarters are marinated in a blend of our Sweet & Smokey BBQ seasoning, apple cider vinegar, garlic, ginger, and thyme, then grilled until tender and lightly charred. The combination of smoky barbecue flavor, aromatic herbs, and bright vinegar creates a savory chicken entrée with subtle Caribbean-inspired character and broad customer appeal.
INGREDIENTS
Approx. Yield: 50 × quarters| Spicelopedia® Sweet & Smokey BBQ seasoning | 2 cups |
| Apple cider vinegar | 1 quart |
| Canola oil | 1 gallon |
| Ginger purée | 1 cup |
| Garlic, minced | 2 cups |
| Dried thyme | ¼ cup |
| Chicken quarters | 50 |
STEPS
- In a large container, combine all ingredients except the chicken. Whisk until fully combined and seasoning is dissolved.
- Add chicken and mix well, massaging the marinade into the meat.
- Cover and marinate for 2 hours.
- Remove chicken from marinade, allowing excess to drain off. Shake off any large pieces before grilling.
- Grill over medium heat, turning as needed to prevent burning, until internal temperature reaches 165°F.
