Island Thyme Chicken Quarters

 

INGREDIENTS

Approx. Yield: 50 × quarters
Spicelopedia’s Sweet & Smokey BBQ seasoning 2 cups
Apple cider vinegar 1 quart
Canola oil 1 gallon
Ginger purée 1 cup
Garlic, minced 2 cups
Dried thyme ¼ cup
Chicken quarters 50

STEPS

  1. In a large container, combine all ingredients except the chicken. Whisk until fully combined and seasoning is dissolved.
  2. Add chicken and mix well, massaging the marinade into the meat.
  3. Cover and marinate for 2 hours.
  4. Remove chicken from marinade, allowing excess to drain off. Shake off any large pieces before grilling.
  5. Grill over medium heat, turning as needed to prevent burning, until internal temperature reaches 165°F.
