Shrimp & Cheddar Grits

DESCRIPTION

This Shrimp & Cheddar Grits recipe pairs Cajun-seasoned shrimp with creamy stone-ground grits enriched with cheddar cheese, butter, and half-and-half. Inspired by Southern coastal cuisine, this comforting dish balances savory spice and rich, cheesy flavor for a satisfying entrée with broad menu appeal.
 

INGREDIENTS

Approx. Yield: 50 servings
Shrimp 31/36 5 lbs.
Spicelopedia® Rajun Cajun seasoning ½ cup
Butter 8 oz. wt.
Stone-ground grits 5 cups
Half & half 2 ½ quarts
Water 2 ½ quarts
Shredded cheddar cheese 2 lbs.
Salt 1 Tbsp.
Green onions For garnish

STEPS

  1. Pat shrimp dry and toss with Spicelopedia® Rajun Cajun seasoning.
  2. In batches, add shrimp to an oiled pan and sear until pink on both sides, about 1–2 minutes per side. Repeat until all shrimp is cooked and set aside.
  3. In a large pot, combine half & half and water and bring to a boil. Add grits.
  4. Reduce heat to low and simmer, stirring and scraping the bottom every 2 minutes for about 20 minutes, or until most liquid is absorbed.
  5. Stir in cheddar cheese and butter until fully combined, then turn off heat.
  6. Transfer grits to a serving dish and top with shrimp and green onions.
