Shrimp & Cheddar Grits
INGREDIENTS
Approx. Yield: 50 servings| Shrimp 31/36 | 5 lbs. |
| Spicelopedia’s Rajun Cajun seasoning | ½ cup |
| Butter | 8 oz. wt. |
| Stone-ground grits | 5 cups |
| Half & half | 2 ½ quarts |
| Water | 2 ½ quarts |
| Shredded cheddar cheese | 2 lbs. |
| Salt | 1 Tbsp. |
| Green onions | For garnish |
STEPS
- Pat shrimp dry and toss with Spicelopedia’s Rajun Cajun seasoning.
- In batches, add shrimp to an oiled pan and sear until pink on both sides, about 1–2 minutes per side. Repeat until all shrimp is cooked and set aside.
- In a large pot, combine half & half and water and bring to a boil. Add grits.
- Reduce heat to low and simmer, stirring and scraping the bottom every 2 minutes for about 20 minutes, or until most liquid is absorbed.
- Stir in cheddar cheese and butter until fully combined, then turn off heat.
- Transfer grits to a serving dish and top with shrimp and green onions.
