Loaded Mashed Potatoes
INGREDIENTS
Approx. Yield: 50 servings| Hot baked potatoes, peel removed | 12 lbs. |
| Half and half | 1 quart |
| Shredded cheddar cheese | 2 lbs. |
| Cooked bacon, chopped | 1 cup (about 3–4 oz.) |
| Unsalted butter, cubed | 2 lbs. |
| Spicelopedia’s Steak & Brisket seasoning | ¼ cup |
| Green onion, sliced | ½ cup |
STEPS
- In a large Cambro, heat half and half until hot.
- In a large bowl, add hot baked potatoes and warm half and half. Mash until combined. Add butter and continue mashing until smooth.
- Add shredded cheddar cheese and mix until fully incorporated.
- Fold in chopped bacon, seasoning, and green onion until evenly combined.
- Transfer to a serving dish and garnish with chives before serving.
