Loaded Mashed Potatoes

 

INGREDIENTS

Approx. Yield: 50 servings
Hot baked potatoes, peel removed 12 lbs.
Half and half 1 quart
Shredded cheddar cheese 2 lbs.
Cooked bacon, chopped 1 cup (about 3–4 oz.)
Unsalted butter, cubed 2 lbs.
Spicelopedia’s Steak & Brisket seasoning ¼ cup
Green onion, sliced ½ cup

STEPS

  1. In a large Cambro, heat half and half until hot.
  2. In a large bowl, add hot baked potatoes and warm half and half. Mash until combined. Add butter and continue mashing until smooth.
  3. Add shredded cheddar cheese and mix until fully incorporated.
  4. Fold in chopped bacon, seasoning, and green onion until evenly combined.
  5. Transfer to a serving dish and garnish with chives before serving.
