INGREDIENTS

Servings: 4
Bulk sausage, cooked 8 oz.
Butter, plus extra for spreading on bread 2 Tbsp.
Eggs, beaten 6 medium
Thick country-style white bread, buttered on all sides 4 large slices
Cheddar cheese slices 4 thick slices
Bacon, cooked 6 slices
Fresh chives 2 Tbsp.
Spicelopedia™ Peri Peri seasoning 1 tsp.

STEPS

  1. Heat a large frying pan or griddle over medium heat. Melt the butter, then reduce the heat to low. Whisk the Spicelopedia™ Peri Peri seasoning into the beaten eggs. Pour the eggs into the butter and stir gently until large, soft curds form. Slightly undercook the eggs so they remain tender and creamy inside the sandwich.
  2. Transfer the cooked eggs to a plate. Carefully wipe the pan clean with a paper towel and turn off the heat.
  3. Place two slices of buttered bread on a cutting board. Layer each slice with half of the cheddar cheese, sausage, bacon, eggs, chives, remaining cheese, and additional Spicelopedia™ Peri Peri seasoning if desired. Top with the remaining buttered bread slices.
  4. Return the pan or griddle to medium heat. Cook one sandwich at a time until golden brown on one side, about 4 minutes. Carefully flip the sandwich, keeping the filling intact, and cook until the second side is golden brown and the cheese is melted, about another 4 minutes. Repeat with the remaining sandwich.
