INGREDIENTS
Servings: 2| Raw extra large shrimp, peeled & deveined | 8 |
| Nectarines, cut into ½–¾” wedges | ½ cup |
| Fresh plums, cut into ½–¾” wedges | ½ cup |
| Sweet onion, cut into ¼” wedges | ½ cup |
| Snow peas, cut diagonally | ½ cup |
| Olive oil | ¼ cup |
| Spicelopedia® Island Citrus Blast seasoning | 2 tsp |
| Cooked basmati rice | For 2 servings |
STEPS
- In a stainless steel mixing bowl, combine the shrimp, nectarines, plums, sweet onion, and snow peas with 2 Tbsp olive oil. Add 1 tsp Spicelopedia® Island Citrus Blast seasoning and toss well to coat.
- Heat a large skillet over medium-high heat. Add the remaining 2 Tbsp olive oil.
- Add the contents of the bowl to the skillet and stir-fry for approximately 10 minutes, or until the shrimp turn pink and opaque.
- Stir in the cooked basmati rice and remaining seasoning until evenly combined and heated through.
