INGREDIENTS

| Large carrots, peeled and sliced diagonally (⅜ inch thick) | 2 |
| Sweet onion, sliced (¼–⅜ inch thick) | ½ |
| Bacon, cut into 1-inch pieces | 6 slices |
| Olive oil, divided | 3 Tbsp. |
| Spicelopedia® Wicked BBQ Rub seasoning | 2 tsp. |
Hot Honey Drizzle

STEPS
- Preheat the oven to 450°F. In a large bowl, toss the Brussels sprouts, carrots, and onion with 2 tablespoons of olive oil and 2 teaspoons of Spicelopedia® Wicked BBQ Rub seasoning until evenly coated.
- Arrange the carrots and Brussels sprouts cut-side down on a large baking sheet. Scatter the bacon pieces around the vegetables.
- Roast for 20–25 minutes, flipping the vegetables halfway through cooking, until they are tender and caramelized and the bacon is crisp.
- While the vegetables are roasting, prepare the hot honey drizzle by stirring together the honey and 1 tablespoon of Spicelopedia® Wicked BBQ Rub seasoning.
- Transfer the roasted vegetables and bacon to a serving dish, drizzle generously with the hot honey, and serve immediately.
