Roasted Vegetables with Bacon and Hot Honey

INGREDIENTS

Servings: 2–4
Brussels sprouts, cleaned and halved 30 medium to large
Large carrots, peeled and sliced diagonally (⅜ inch thick) 2
Sweet onion, sliced (¼–⅜ inch thick) ½
Bacon, cut into 1-inch pieces 6 slices
Olive oil, divided 3 Tbsp.
Spicelopedia® Wicked BBQ Rub seasoning 2 tsp.

Hot Honey Drizzle

Honey ½ cup
Spicelopedia® Wicked BBQ Rub seasoning 1 Tbsp.

STEPS

  1. Preheat the oven to 450°F. In a large bowl, toss the Brussels sprouts, carrots, and onion with 2 tablespoons of olive oil and 2 teaspoons of Spicelopedia® Wicked BBQ Rub seasoning until evenly coated.
  2. Arrange the carrots and Brussels sprouts cut-side down on a large baking sheet. Scatter the bacon pieces around the vegetables.
  3. Roast for 20–25 minutes, flipping the vegetables halfway through cooking, until they are tender and caramelized and the bacon is crisp.
  4. While the vegetables are roasting, prepare the hot honey drizzle by stirring together the honey and 1 tablespoon of Spicelopedia® Wicked BBQ Rub seasoning.
  5. Transfer the roasted vegetables and bacon to a serving dish, drizzle generously with the hot honey, and serve immediately.
