INGREDIENTS

Italian sausage links (4 oz. each) 5
Medium sweet onions 3
Bell peppers (red, orange, yellow, and green) 4
Garlic cloves, minced 1–2
Olive oil 3 Tbsp.
Spicelopedia® Wicked Pork seasoning 1 Tbsp.
Sandwich rolls 5

STEPS

  1. Preheat the oven to 450°F.
  2. Cut the stem ends off the bell peppers, slice them in half lengthwise, remove the seeds, and cut them into evenly sized strips, about ½ inch by 3 inches.
  3. Place the sausage links, peppers, sliced onions, and minced garlic in a large stainless-steel bowl. Add the Spicelopedia® Wicked Pork seasoning and toss well until everything is evenly coated.
  4. Transfer the sausage and vegetable mixture to a large rimmed baking sheet, spreading the vegetables into an even layer and nestling the sausage links in the center. For easier cleanup, line the baking sheet with parchment paper if desired.
  5. Roast for 25–30 minutes, or until the sausages are fully cooked and the vegetables are tender and lightly caramelized.
  6. Serve the sausage and peppers on sandwich rolls, if desired.
