Bacon and Asparagus Frittata

INGREDIENTS
Servings: 6| Bacon, cooked and crumbled | 8 slices |
| Asparagus, fresh or frozen | 8 oz. |
| Extra-large eggs (or 10 large eggs) | 8 |
| Grated Parmesan cheese, divided | ¼ cup |
| Half-and-half cream | ¼ cup |
| Spicelopedia® Texas Brisket seasoning | ½ Tbsp. |
| Chopped chives or fresh parsley (optional) | For garnish |
| Cooking spray (optional) | As needed |
STEPS
- Preheat the oven to 375°F. Lightly coat a pie pan (preferably ceramic) with cooking spray, if using.
- Cook the asparagus in the microwave for 3–4 minutes, or until just tender. Let it cool slightly, then cut into ½-inch pieces. Spread the asparagus and two-thirds of the crumbled bacon evenly over the bottom of the prepared pie pan.
- In a large bowl, whisk together the eggs, half of the grated Parmesan cheese, the half-and-half cream, and the Spicelopedia® Texas Brisket seasoning until well combined. Pour the mixture over the asparagus and bacon.
- Bake for about 25 minutes, or until the center is set. During the last few minutes of baking, sprinkle the remaining Parmesan cheese over the top.
- Remove from the oven and let the frittata rest for about 5 minutes before slicing. Garnish with the remaining bacon and chopped chives, fresh parsley, or both, if desired.
