Pork Chops with Apples & Spiced Butternut Squash

INGREDIENTS

Servings: 4
Olive oil 2 Tbsp.
Boneless pork chops 4 (4–5 oz. each)
Fresh diced butternut squash 16 oz.
Butter (cut in pieces) 2 Tbsp.
Spicelopedia® Wicked BBQ Rub seasoning 2 tsp
Pumpkin pie spice 1½ tsp
Apple (cored & thinly sliced) 1 large (gala)
Maple syrup 2 Tbsp.
Water ¼ cup

STEPS

  1. Heat a 12" skillet over medium-high heat and add olive oil.
  2. Season pork chops with Spicelopedia® Wicked BBQ Rub seasoning.
  3. Add pork chops to the skillet and cook about 3 minutes per side. Remove and set aside.
  4. Place butternut squash in a microwave-safe bowl. Add butter, ½ tsp pumpkin pie spice, and 2 Tbsp water. Microwave for 4–5 minutes or until tender. Stir to combine.
  5. Add sliced apple and 2 Tbsp water to the skillet. Cover and cook for 2 minutes, stirring once.
  6. In a small bowl, mix maple syrup with remaining 1 tsp pumpkin pie spice.
  7. Return pork chops to the pan and cook with apples for 1–2 minutes, or until internal temperature reaches 145°F.
  8. Serve pork chops topped with apples and pair with the butternut squash.
