Pork Chops with Apples & Spiced Butternut Squash

STEPS
- Heat a 12" skillet over medium-high heat and add olive oil.
- Season pork chops with Spicelopedia™ Wicked BBQ Rub seasoning.
- Add pork chops to the skillet and cook about 3 minutes per side. Remove and set aside.
- Place butternut squash in a microwave-safe bowl. Add butter, ½ tsp pumpkin pie spice, and 2 Tbsp water. Microwave for 4–5 minutes or until tender. Stir to combine.
- Add sliced apple and 2 Tbsp water to the skillet. Cover and cook for 2 minutes, stirring once.
- In a small bowl, mix maple syrup with remaining 1 tsp pumpkin pie spice.
- Return pork chops to the pan and cook with apples for 1–2 minutes, or until internal temperature reaches 145°F.
- Serve pork chops topped with apples and pair with the butternut squash.
