Peri Peri Chicken and Sweet Potatoes

This African-inspired Peri Peri Chicken is bold, comforting, and packed with rich, savory flavor. Chicken thighs are marinated in a vibrant blend of Spicelopedia® Peri Peri seasoning, olive oil, and fresh lemon juice, then slowly braised in chicken stock until perfectly tender and juicy. INGREDIENTS

| Spicelopedia® Peri Peri seasoning | 1 Tbsp. |
| Olive oil | 3 Tbsp. |
| Fresh lemon juice | 1 Tbsp. |
| Sweet potatoes, peeled and cut into 1 × 2-inch pieces | 2 |
| Medium red onion, cut into ½-inch wedges | 1 |
| Minced garlic | 2 tsp. |
| Chicken broth or stock | 2 cups |
STEPS
- In a shallow bowl, whisk together the Spicelopedia® Peri Peri seasoning, olive oil, and fresh lemon juice. Trim any excess fat from the chicken thighs if needed. Add the chicken, sweet potatoes, and red onion to the marinade, tossing until everything is evenly coated. Cover and refrigerate for 1–8 hours.
- Heat a 10–12-inch skillet over medium-high heat. Add a drizzle of olive oil if needed, then place the chicken thighs in the pan and sear until golden brown on one side.
- Add the sweet potatoes and red onion to the skillet. Flip the chicken and sear the other side until lightly browned.
- Stir in the minced garlic, then pour the chicken broth or stock into the skillet. Cover the pan, reduce the heat to low, and simmer until the chicken reaches an internal temperature of 160°F and the sweet potatoes are fork-tender.
- Check the skillet about halfway through cooking to ensure there is enough liquid remaining and that nothing is sticking to the pan. Add a splash of additional broth if needed.
- Serve hot with warm naan bread for soaking up the flavorful braising sauce.
