INGREDIENTS

Servings: 2
Spicelopedia® Italian Lemon Pepper seasoning 2½ tsp
Boneless, skinless chicken breasts 2 (4 oz)
Olive oil 2 Tbsp
Dry orzo pasta, cooked to package directions and drained 1 cup
Fresh asparagus spears, broken into 1½–2 inch pieces 4
Heavy cream ½ cup
Salted butter 1 Tbsp

STEPS

  1. Place asparagus in boiling salted water for 1–2 minutes. Drain and shock with very cold water to stop the cooking process.
  2. Place the chicken in a bowl and coat with 1 Tbsp. olive oil and 2 tsp. Spicelopedia® Italian Lemon Pepper seasoning.
  3. Heat a sauté pan over medium-high heat and add 2 Tbsp. olive oil. Add the chicken and cook on both sides until it reaches 160°F. Remove from the pan and slice each breast into strips.
  4. Wipe out the pan and return it to medium-high heat. Add the asparagus, heavy cream, butter, cooked orzo, and remaining ½ tsp. Spicelopedia® Italian Lemon Pepper seasoning. Stir well to combine and simmer until the flavors are blended.
  5. Divide the orzo mixture between two plates and top with the sliced chicken. Serve immediately.
