INGREDIENTS
Servings: 2| Spicelopedia® Italian Lemon Pepper seasoning | 2½ tsp |
| Boneless, skinless chicken breasts | 2 (4 oz) |
| Olive oil | 2 Tbsp |
| Dry orzo pasta, cooked to package directions and drained | 1 cup |
| Fresh asparagus spears, broken into 1½–2 inch pieces | 4 |
| Heavy cream | ½ cup |
| Salted butter | 1 Tbsp |
STEPS
- Place asparagus in boiling salted water for 1–2 minutes. Drain and shock with very cold water to stop the cooking process.
- Place the chicken in a bowl and coat with 1 Tbsp. olive oil and 2 tsp. Spicelopedia® Italian Lemon Pepper seasoning.
- Heat a sauté pan over medium-high heat and add 2 Tbsp. olive oil. Add the chicken and cook on both sides until it reaches 160°F. Remove from the pan and slice each breast into strips.
- Wipe out the pan and return it to medium-high heat. Add the asparagus, heavy cream, butter, cooked orzo, and remaining ½ tsp. Spicelopedia® Italian Lemon Pepper seasoning. Stir well to combine and simmer until the flavors are blended.
- Divide the orzo mixture between two plates and top with the sliced chicken. Serve immediately.
