INGREDIENTS
Servings: 4| Penne pasta (or pasta of choice) | 1 lb. |
| Garlic, minced | 3 cloves |
| Olive oil | 2 Tbsp. |
| Pumpkin puree | 1 (15 oz.) can |
| Vegetable broth (or chicken broth) | 1½ cups |
| Spicelopedia® Peri Peri seasoning | 2 tsp. |
| Greek yogurt | ¼ cup |
| Parmesan cheese, shredded (plus more for garnish) | ½ cup |
STEPS
- Cook the penne pasta according to the package directions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Carefully stir in the pumpkin puree, vegetable broth (or chicken broth), and Spicelopedia® Peri Peri seasoning. Simmer for 10–15 minutes, stirring occasionally, until the sauce thickens.
- Temper the Greek yogurt by whisking about ½ cup of the hot pumpkin sauce into the yogurt in a small bowl. Once smooth, stir the yogurt mixture back into the skillet. This helps prevent the yogurt from curdling.
- Add the shredded Parmesan cheese and stir until mostly melted and incorporated into the sauce. Taste and adjust the seasoning if desired.
- Toss the cooked pasta with the pumpkin sauce until evenly coated. Serve immediately, garnished with additional Parmesan cheese if desired.
