Maple Pecan Fish Filet
DESCRIPTION
This Maple Pecan Fish Fillet is a rich, flavorful dish that balances sweet, savory, and spicy elements in every bite. Firm, flaky cobia is seasoned with Spicelopedia® Peri Peri seasoning and seared to create a lightly crisp exterior with a tender center. A crunchy pecan and almond crust adds nutty texture, while a warm maple glaze brings subtle sweetness that enhances the natural richness of the fish. A touch of soy sauce deepens the umami profile, tying everything together into a refined, well-balanced seafood dish that feels both comforting and elevated.
INGREDIENTS

| Almonds or pecans, chopped | ¼ cup |
| Spicelopedia® Peri Peri seasoning | 1 Tbsp. |
| Olive oil | ¼ cup |
| Maple syrup | ¼ cup |
| Soy sauce | 1 Tbsp. |
STEPS
- Place the almonds or pecans in a plastic bag and finely crush them using a meat mallet or rolling pin. Add the Spicelopedia® Peri Peri seasoning to the bag and mix well.
- Lightly moisten the fish fillets with water, then add them to the bag. Toss until the fish is evenly coated on all sides with the nut and seasoning mixture.
- Heat a large sauté pan over medium-high heat. Add half of the olive oil, then place the fish fillets in the pan. Reduce heat to medium and cook until golden brown, about 3–4 minutes per side, adding remaining oil as needed when flipping. Cook to an internal temperature of 140–145°F.
- Remove the fish from the pan and set aside. Discard excess oil if necessary.
- Add the maple syrup and soy sauce to the same pan and whisk over medium heat until the sauce begins to simmer and slightly thicken.
- Spoon the warm maple-soy sauce over the fish and serve immediately.
