INGREDIENTS
Servings: 1| Chicken breast, cut into 1-inch pieces | 8 oz. |
| Spicelopedia® Italian Lemon Pepper Seasoning | 4 tsp |
| Celery, ½-inch diced | 2 fl. oz. |
| Onion, ½-inch diced | 2 fl. oz. |
| Minced garlic | 1 tsp |
| Carrots, ¼-inch diced | 2 fl. oz. |
| Tomatoes, ½-inch diced | 2 fl. oz. |
| Prepared red wine demi-glace | 4 fl. oz. |
| Prepared polenta | 4 fl. oz. |
| Fresh basil, chopped | 1 Tbsp |
STEPS
- Season the chicken breast pieces generously with Spicelopedia® Italian Lemon Pepper Seasoning.
- Heat a lightly greased sauté pan over medium heat. Add the chicken and cook until lightly browned on all sides.
- Add the celery, onions, garlic, carrots, and tomatoes. Sauté for about 2 minutes, stirring occasionally.
- Pour in the prepared red wine demi-glace. Cover the pan, reduce the heat to low, and simmer for 5 minutes, or until the chicken is fully cooked and the vegetables are tender.
