DESCRIPTION
Jambalaya is a classic Southern comfort dish featuring a flavorful combination of spicy Italian sausage, tender shrimp, colorful bell peppers, tomatoes, and rice. INGREDIENTS
Servings: 8–10| Ground spicy Italian sausage | ½ lb. |
| Red bell pepper, diced | 1 cup |
| Yellow bell pepper, diced | 1 cup |
| Diced onion | ½ cup |
| Diced tomatoes in juice | 1 (28 oz.) can |
| Water | 2½ cups |
| Rice | 2 cups |
| Olive oil | ½ cup |
| Spicelopedia® Rajun Cajun seasoning | 3 Tbsp. |
| Peeled, deveined, tail-off small shrimp | 16 each |
STEPS
- Heat olive oil in a large pot or Dutch oven. Add the diced onion and spicy Italian sausage, cooking until the sausage is browned.
- Add the diced red and yellow bell peppers and continue cooking for 5–8 minutes until the vegetables begin to soften.
- Add the Spicelopedia® Rajun Cajun seasoning, water, and diced tomatoes with their juice. Bring the mixture to a boil.
- Add the rice and stir well to combine. Reduce heat to a slow simmer, cover, and cook until the rice is tender. Alternatively, cover and bake in a 400°F oven for 15 minutes.
- Remove the cover and stir in the shrimp. Replace the cover and continue cooking for 5–8 minutes, or until the liquid is absorbed and the shrimp are fully cooked.
