Mediterranean Tomato and Feta Salad

 
 

INGREDIENTS

Servings: 4
Fresh cherry tomatoes, halved 2 cups
Cucumber slices (¼ inch, quartered) 1 cup
Red onion, diced ½ cup
Spicelopedia® Italian Lemon Pepper seasoning ½ tsp
Olive oil 2 Tbsp
Balsamic vinegar 2 tsp
Feta cheese, cut into ½” chunks 1 cup

STEPS

  1. In a medium stainless steel bowl, whisk together the Spicelopedia® Italian Lemon Pepper seasoning, olive oil, and balsamic vinegar until well combined.
  2. Add the cherry tomatoes, cucumber, red onion, and feta cheese chunks. Gently fold with a spatula until everything is evenly coated.
  3. Cover the salad and refrigerate for 4–8 hours to chill and allow flavors to develop.
  4. Serve chilled.
