INGREDIENTS

Servings: 4
Bulgur wheat, uncooked ½ cup
Water 1 cup
Spicelopedia® Italian Lemon Pepper seasoning 1 Tbsp
Tomatoes, deseeded & finely chopped 1 cup
Fresh parsley, chopped 3 bunches
Fresh mint, chopped ½ cup
English cucumber, deseeded & chopped into small cubes ½ cup
Green onions, finely chopped 3

STEPS

  1. Bring the water to a boil, then add the bulgur wheat. Cover, reduce heat to a simmer, and cook for about 5 minutes, stirring occasionally. Allow to cool completely.
  2. Transfer the cooled bulgur to a large mixing bowl.
  3. Add the tomatoes, parsley, mint, cucumber, and green onions to the bowl. Toss well to combine.
  4. Taste and adjust seasoning as needed, adding fresh lemon juice if desired before serving.
