INGREDIENTS
Servings: 4| Bulgur wheat, uncooked | ½ cup |
| Water | 1 cup |
| Spicelopedia® Italian Lemon Pepper seasoning | 1 Tbsp |
| Tomatoes, deseeded & finely chopped | 1 cup |
| Fresh parsley, chopped | 3 bunches |
| Fresh mint, chopped | ½ cup |
| English cucumber, deseeded & chopped into small cubes | ½ cup |
| Green onions, finely chopped | 3 |
STEPS
- Bring the water to a boil, then add the bulgur wheat. Cover, reduce heat to a simmer, and cook for about 5 minutes, stirring occasionally. Allow to cool completely.
- Transfer the cooled bulgur to a large mixing bowl.
- Add the tomatoes, parsley, mint, cucumber, and green onions to the bowl. Toss well to combine.
- Taste and adjust seasoning as needed, adding fresh lemon juice if desired before serving.
