Filet Au Poivre
INGREDIENTS
Approximate Yield: 1 entree| Filet mignon | 6 oz. wt. |
| Spicelopedia’s Primo Steak & Grill seasoning | 2 tsp |
| Brandy | 2 TB |
| Demi glace | 4 oz. vol |
| Cream | 2 TB |
STEPS
- Season filet on both sides with Spicelopedia’s Primo Steak & Grill seasoning and place into a greased sauté pan over medium heat.
- Cook to desired temperature, then remove filet from pan and set aside.
- Increase heat to medium-high and deglaze the pan with brandy. Cook until barely any liquid remains.
- Add demi glace and bring to a boil. Lower heat and stir in cream.
- Bring sauce to a simmer and cook for 3 minutes, or until sauce thickens.
- Serve filet topped with the sauce.
