Caribbean Citrus Shrimp
DESCRIPTION
These Island Citrus Shrimp and Cilantro Lime Rice are bursting with bright, tropical flavor in every bite. Large shrimp are marinated in Spicelopedia® Island Citrus Blast seasoning and fresh lime juice, then sautéed until tender and perfectly seasoned. Served over a bed of fragrant cilantro lime rice, the dish combines vibrant citrus, savory spices, and fresh herbs for a light yet satisfying meal. Every bite delivers a refreshing balance of zesty, savory, and tropical flavors that brings a taste of the islands to your table.
INGREDIENTS
Servings: 4| Large shrimp (21/25), peeled & deveined | 1 lb |
| Spicelopedia® Island Citrus Blast seasoning | 1 Tbsp + ½ tsp (divided) |
| Lime juice | 2 Tbsp + 2 Tbsp (divided) |
| Olive oil | ⅓ cup + 2 Tbsp (divided) |
| Salted butter | 1 Tbsp |
| Fresh cilantro, chopped | 2 Tbsp |
| Basmati rice, cooked | For 4 servings |
STEPS
- In a medium stainless steel bowl, whisk together 1 Tbsp Spicelopedia® Island Citrus Blast seasoning, 2 Tbsp fresh lime juice, and ⅓ cup olive oil.
- Add shrimp and toss until fully coated. Refrigerate for 15 minutes.
- Heat a flat top grill or sauté pan over medium-high heat. Lightly spray with cooking oil.
- Drain shrimp and add to the hot pan. Sauté for 4–5 minutes, or until shrimp are opaque and cooked through. Do not overcook.
- In a separate bowl, combine cooked rice with 2 Tbsp lime juice, cilantro, ½ tsp seasoning, and butter. Mix until well combined.
- Serve shrimp over seasoned rice.
