Caribbean Citrus Shrimp

 
 

INGREDIENTS

Servings: 4
Large shrimp (21/25), peeled & deveined 1 lb
Spicelopedia Island Citrus Blast seasoning 1 Tbsp + ½ tsp (divided)
Lime juice 2 Tbsp + 2 Tbsp (divided)
Olive oil ⅓ cup + 2 Tbsp (divided)
Salted butter 1 Tbsp
Fresh cilantro, chopped 2 Tbsp
Basmati rice, cooked For 4 servings

STEPS

  1. In a medium stainless steel bowl, whisk together 1 Tbsp Spicelopedia Island Citrus Blast seasoning, 2 Tbsp fresh lime juice, and ⅓ cup olive oil.
  2. Add shrimp and toss until fully coated. Refrigerate for 15 minutes.
  3. Heat a flat top grill or sauté pan over medium-high heat. Lightly spray with cooking oil.
  4. Drain shrimp and add to the hot pan. Sauté for 4–5 minutes, or until shrimp are opaque and cooked through. Do not overcook.
  5. In a separate bowl, combine cooked rice with 2 Tbsp lime juice, cilantro, ½ tsp seasoning, and butter. Mix until well combined.
  6. Serve shrimp over seasoned rice.
