Chipotle Beef Enchiladas

DESCRIPTION

Chipotle Beef Enchiladas are a hearty, flavor-packed Mexican-inspired dinner featuring seasoned ground beef, fluffy rice, and plenty of melted cheese wrapped in soft flour tortillas. Spicelopedia® Chili Lime Adobo with Chipotle adds layers of smoky chipotle, zesty lime, garlic, and savory spices to the beef filling, creating a bold flavor that pairs perfectly with rich enchilada sauce and creamy melted cheese. Finished with mild green chiles for an extra touch of Southwest flavor, these baked enchiladas are bubbly, comforting, and perfect for family dinners, meal prep, or festive gatherings.
 
 

INGREDIENTS

Servings: 2–4
Ground beef 1 lb
Olive oil As needed
Cooked white or yellow rice ½ cup
Yellow onion, chopped ½ onion
Enchilada sauce 2 × 10 oz cans
Spicelopedia® Chili Lime Adobo with Chipotle seasoning 1 Tbsp (divided)
Shredded Mexican blend or sharp cheddar cheese 2 cups
Green chiles, canned and chopped 1 Tbsp
Flour tortillas (8-inch) 4 tortillas

STEPS

  1. Heat oil in a sauté pan. Add ground beef and onion and cook until no pink remains. Drain excess liquid.
  2. Add cooked rice, ½ cup enchilada sauce, ¼ Tbsp seasoning, and ½ cup shredded cheese. Stir to combine.
  3. In a separate bowl, combine remaining enchilada sauce, chopped green chiles, and remaining chili lime adobo seasoning.
  4. Ladle a small amount of sauce into the bottom of a baking dish to lightly coat.
  5. Divide meat mixture into four portions. Spread onto the lower third of each tortilla, roll tightly, and place seam-side down in the baking dish.
  6. Top evenly with remaining sauce and then remaining cheese.
  7. Bake at 350°F for 20 minutes, or until cheese is melted and dish is heated through.
