Chipotle Beef Enchiladas
INGREDIENTS
Servings: 2–4| Ground beef | 1 lb |
| Olive oil | As needed |
| Cooked white or yellow rice | ½ cup |
| Yellow onion, chopped | ½ onion |
| Enchilada sauce | 2 × 10 oz cans |
| Spicelopedia™ Chili Lime Adobo with Chipotle seasoning | 1 Tbsp (divided) |
| Shredded Mexican blend or sharp cheddar cheese | 2 cups |
| Green chiles, canned and chopped | 1 Tbsp |
| Flour tortillas (8-inch) | 4 tortillas |
STEPS
- Heat oil in a sauté pan. Add ground beef and onion and cook until no pink remains. Drain excess liquid.
- Add cooked rice, ½ cup enchilada sauce, ¼ Tbsp seasoning, and ½ cup shredded cheese. Stir to combine.
- In a separate bowl, combine remaining enchilada sauce, chopped green chiles, and remaining chili lime adobo seasoning.
- Ladle a small amount of sauce into the bottom of a baking dish to lightly coat.
- Divide meat mixture into four portions. Spread onto the lower third of each tortilla, roll tightly, and place seam-side down in the baking dish.
- Top evenly with remaining sauce and then remaining cheese.
- Bake at 350°F for 20 minutes, or until cheese is melted and dish is heated through.
