INGREDIENTS

Servings: 4
Bone-in, skin-on turkey thighs (2 large thighs) 2.25–2.50 lbs
Spicelopedia® Chili Lime Adobo seasoning 2 Tbsp
Baking powder 1 tsp
Freshly squeezed blood orange juice ¼ cup
Low sodium soy sauce 1 tsp
Cooking spray (optional for grill) As needed

STEPS

  1. Pat turkey dry with paper towels and trim any excess skin if needed. Combine seasoning with baking powder, then rub evenly over both sides of the turkey thighs.
  2. Cover and refrigerate for at least 2 hours.
  3. Lightly coat grill with cooking spray (optional). Preheat grill with one side set to high/direct heat and the other to low/indirect heat.
  4. Sear turkey skin-side down over direct heat, turning once, until both sides are browned, about 5–7 minutes total.
  5. Move turkey to indirect heat and continue cooking until internal temperature reaches 165°F, rotating as needed, about 30 minutes.
  6. While turkey cooks, combine juice and soy sauce in a saucepan. Heat over medium until bubbling and reduced by half.
  7. Baste turkey thighs with reduced sauce during the last 5 minutes of cooking.
