Chili Lime Rice Pilaf

INGREDIENTS

Servings: 8
Olive oil 2 Tbsp.
Small onion, finely chopped 1
Minced garlic cloves 2
Tomato paste 2 Tbsp.
Spicelopedia® Chili Lime Adobo with Chipotle Seasoning 1 Tbsp.
Chicken broth or stock 3½ cups
Long grain white rice (such as Uncle Ben’s) 2½ cups
Red bell pepper, diced ½ cup

STEPS

  1. Heat a large saucepan over medium heat. Add the olive oil, onions, and red bell peppers. Sauté for 4–5 minutes, or until the onions become translucent and the peppers soften.
  2. Add the garlic, tomato paste, and rice to the pan. Stir together and cook for 3 minutes to lightly toast the rice and develop the flavors.
  3. Add the chicken broth or stock and Spicelopedia® Chili Lime Adobo with Chipotle Seasoning. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for approximately 20 minutes, or until the liquid is fully absorbed and the rice is tender.
  5. Taste the rice and adjust seasoning as desired before serving.
