Roasted Chicken on Angel Hair Pasta

INGREDIENTS
Servings: 4–6| Whole chicken, cut into quarters (backbone removed) | 1 (3 lb.) |
| Garlic cloves, minced | 3 |
| Fresh rosemary, finely chopped | 2 Tbsp. |
| Olive oil (lemon olive oil if available) | 4 Tbsp. |
| Spicelopedia® Italian Lemon Pepper Seasoning | 1 Tbsp. |
| Angel hair pasta, cooked according to package directions | 1 lb. |
STEPS
- Preheat the oven to 400°F. Remove the backbone from the chicken and cut it into quarters. Wash and set aside in a mixing bowl.
- Toss the cooked, drained angel hair pasta with 2 tsp rosemary, 2 tsp minced garlic, 1 tsp Spicelopedia® Italian Lemon Pepper Seasoning, and 2 Tbsp olive oil using tongs until the pasta is evenly coated.
- Whisk together 2 Tbsp olive oil, 2 tsp Spicelopedia® Italian Lemon Pepper Seasoning, and 2 tsp rosemary to create the marinade. Add additional seasoning if not using lemon olive oil.
- Add the chicken to the marinade and coat thoroughly. Let the chicken rest for 10 minutes to absorb the flavors.
- Grease a shallow baking dish. Spread the seasoned angel hair pasta evenly across the bottom of the dish.
- Place the chicken pieces on top of the pasta with the skin side facing up.
- Roast for approximately 1¼ hours, or until the chicken reaches an internal temperature of 160°F and the juices run clear. Allow the chicken to rest before serving.
