Chicken Cacciatore

 

INGREDIENTS

Approximate Yield: 1 entree
Chicken breast pieces, cut into 1” cubes 8 oz wt.
Spicelopedia™ Italian Lemon Pepper seasoning 4 tsp
Mushrooms, ½” diced 2 fl oz
Onions, ½” diced 2 fl oz
Minced garlic 1 tsp
Tomatoes, ½” diced 2 fl oz
Prepared red wine demi-glace 4 fl oz
Roasted potatoes 6 fl oz
Chopped parsley 1 Tbsp

STEPS

  1. Season the chicken breast pieces generously with Spicelopedia™ Italian Lemon Pepper seasoning.
  2. Place the chicken into a greased sauté pan over medium heat and brown lightly on all sides.
  3. Add the onions, garlic, mushrooms, and tomatoes to the pan. Sauté for approximately 2 minutes.
  4. Pour the prepared red wine demi-glace into the pan. Cover, reduce heat, and simmer for 5 minutes.
  5. Serve alongside roasted potatoes and garnish with chopped parsley.
