DESCRIPTION
Calypso Chicken is a tropical-inspired grilled chicken recipe bursting with bright citrus, savory spices, and island flavor. Bone-in, skin-on chicken thighs are marinated in a flavorful blend of Spicelopedia® Island Citrus Blast, dark rum, soy sauce, rice vinegar, and extra virgin olive oil, creating a balance of sweet, tangy, and savory notes. As the chicken grills, the marinade caramelizes into a beautifully golden, flavorful crust while keeping the meat tender and juicy. | Spicelopedia® Island Citrus Blast Seasoning (plus more for chicken) | 2 Tbsp. |
| Dark rum | 2 Tbsp. |
| Lite soy sauce | 2 Tbsp. |
| Plain rice vinegar | 2 Tbsp. |
| Extra virgin olive oil | 2 Tbsp. |
| Cooking spray (optional, for grill) | As needed |
STEPS
- Pat chicken dry with a paper towel.
- Combine Spicelopedia® Island Citrus Blast Seasoning (minus the reserved portion) with the wet ingredients in a bowl. Whisk to combine.
- Pour marinade over chicken and refrigerate for at least 4 hours (longer if possible).
- Treat grill with cooking spray (optional). Preheat grill with one side set for direct high heat (searing) and the other side set for indirect heat.
- Remove chicken from marinade and pat off excess with a paper towel. Season with reserved seasoning.
- Sear chicken over direct heat for about 5 minutes, turning once.
- Move chicken to indirect heat and continue cooking until internal temperature reaches 165°F, rotating as needed.
