INGREDIENTS
Servings: 4| Jumbo shrimp, fresh or frozen, shelled and deveined | 20 pieces |
| Spicelopedia® Rajun Cajun seasoning | 1 Tbsp. |
| Andouille sausage, sliced | 12 oz. |
| Red bell pepper, sliced | ½ cup |
| Sweet onion, sliced | ¼ cup |
| Diced tomatoes with green chiles (hot or mild) | 10 oz. |
| Heavy cream | ¼ cup |
| Butter, cut into chunks (optional but recommended) | 2 Tbsp. |
STEPS
- Toss the shrimp with the Spicelopedia® Rajun Cajun seasoning until evenly coated and set aside.
- Add the sliced Andouille sausage to a heavy skillet over medium heat and cook until lightly browned.
- Add the seasoned shrimp, red bell pepper, and sweet onion to the skillet. Sauté until the shrimp is nearly cooked through and the vegetables have softened.
- Stir in the diced tomatoes with green chiles and heavy cream. Reduce the heat to low and simmer for 2–3 minutes.
- Add the butter and continue to simmer, stirring gently, until the sauce thickens and becomes rich and glossy.
