Cajun Shrimp and Orzo Skillet

INGREDIENTS
Servings: 4| Extra large shrimp (21–25 count), peeled and deveined, thawed | 12 oz. |
| Olive oil, divided | 3 Tbsp. |
| Spicelopedia® Rajun Cajun seasoning | 2 tsp. |
| Orzo | 1½ cups |
| Red onion, finely chopped | ¼ cup |
| Chicken or vegetable broth | 4½ cups |
| Asparagus, trimmed and cut into ½-inch pieces | ½ bunch |
STEPS
- Pat the shrimp dry and place them in a stainless-steel bowl. Toss with 1 tablespoon of olive oil and 1 teaspoon of Spicelopedia® Rajun Cajun seasoning until evenly coated.
- Heat the remaining 2 tablespoons of olive oil in a large nonstick skillet over medium-high heat. Once the oil begins to shimmer, add the shrimp and cook for about 3 minutes per side, or until lightly browned and cooked through. Transfer to a plate and cover to keep warm.
- Add the orzo and chopped red onion to the same skillet. Toast the orzo, stirring constantly, for 2–3 minutes.
- Pour in the broth and bring to a simmer. Cook over medium heat, stirring frequently, until the orzo is tender, about 12 minutes.
- Stir in the asparagus and remaining Spicelopedia® Rajun Cajun seasoning. Cook for about 2 minutes, or until the asparagus is tender.
- Return the shrimp to the skillet, cover briefly to warm through, and serve immediately in bowls.
