Cajun Shrimp and Orzo Skillet

INGREDIENTS

Servings: 4
Extra large shrimp (21–25 count), peeled and deveined, thawed 12 oz.
Olive oil, divided 3 Tbsp.
Spicelopedia® Rajun Cajun seasoning 2 tsp.
Orzo 1½ cups
Red onion, finely chopped ¼ cup
Chicken or vegetable broth 4½ cups
Asparagus, trimmed and cut into ½-inch pieces ½ bunch

STEPS

  1. Pat the shrimp dry and place them in a stainless-steel bowl. Toss with 1 tablespoon of olive oil and 1 teaspoon of Spicelopedia® Rajun Cajun seasoning until evenly coated.
  2. Heat the remaining 2 tablespoons of olive oil in a large nonstick skillet over medium-high heat. Once the oil begins to shimmer, add the shrimp and cook for about 3 minutes per side, or until lightly browned and cooked through. Transfer to a plate and cover to keep warm.
  3. Add the orzo and chopped red onion to the same skillet. Toast the orzo, stirring constantly, for 2–3 minutes.
  4. Pour in the broth and bring to a simmer. Cook over medium heat, stirring frequently, until the orzo is tender, about 12 minutes.
  5. Stir in the asparagus and remaining Spicelopedia® Rajun Cajun seasoning. Cook for about 2 minutes, or until the asparagus is tender.
  6. Return the shrimp to the skillet, cover briefly to warm through, and serve immediately in bowls.
