Buffalo Roasted Turkey

This Buffalo Roasted Turkey is a bold, flavor-packed twist on a holiday classic. INGREDIENTS

Servings: 10–12
Turkey 12–14 lb.
Spicelopedia® Peri Peri seasoning 1 Tbsp.
Salted butter, softened 1 stick
Salted butter, melted (for buffalo sauce) ½ cup
Hot sauce (e.g., Frank’s) 2/3 cup
Distilled white vinegar 2 Tbsp.
Worcestershire sauce 1 tsp.
Spicelopedia® Peri Peri seasoning (for sauce) 1 tsp.

STEPS

  1. Prepare the turkey according to package directions and preheat the oven as instructed.
  2. In a medium bowl, mix the softened butter with 1 tablespoon of Spicelopedia® Peri Peri seasoning until fully combined.
  3. Gently loosen the skin of the turkey over the breast and thighs by sliding a spoon or your hand between the skin and meat. Rub the seasoned butter underneath the skin, spreading it evenly.
  4. To make the buffalo sauce, whisk together the melted butter, hot sauce, distilled white vinegar, Worcestershire sauce, and 1 teaspoon of Spicelopedia® Peri Peri seasoning until smooth and well combined. Reserve ½ cup of the sauce for serving.
  5. After the turkey has roasted for about 2 hours, baste it generously with the buffalo sauce and return it to the oven for 30 minutes.
  6. Baste again with the buffalo sauce and continue roasting for another 30 minutes, or until the internal temperature reaches 165°F in the inner thigh.
  7. Remove the turkey from the oven and let it rest before carving. Serve with the reserved buffalo sauce drizzled over the top.
