Blueberry Barbecue Chicken

This Blueberry Barbecue Chicken is a bold sweet-and-spicy twist on classic BBQ. Juicy chicken drumsticks are coated in a rich blueberry barbecue sauce and seasoned with Spicelopedia® Peri Peri seasoning for a smoky heat that balances the natural sweetness of the fruit. As the chicken cooks, the sauce reduces into a sticky, caramelized glaze that clings to every bite. Perfect for grilling, baking, or summer cookouts, this recipe delivers a unique flavor combination that’s both tangy, spicy, and deeply satisfying.
 

INGREDIENTS

Servings: 4
Olive oil ¼ cup
Poultry seasoning 2 tsp.
Spicelopedia® Peri Peri seasoning 1 tsp.
Chicken drumsticks (3–4 lbs total) 8
Garlic cloves 2
Blueberries (fresh or frozen) ½ cup
Onion, chopped ¼ cup
Chicken stock ¼ cup
Blueberry preserves ¼ cup
Balsamic vinegar 1½ Tbsp.

STEPS

  1. Preheat an outdoor grill for direct grilling over medium-high heat.
  2. In a small bowl, combine the olive oil, poultry seasoning, and Spicelopedia® Peri Peri seasoning. Pat the chicken drumsticks dry with paper towels, then rub them evenly with the seasoning mixture.
  3. In a blender or food processor, puree the garlic, blueberries, chopped onion, chicken stock, blueberry preserves, and balsamic vinegar until smooth. Reserve ½ cup of the sauce for serving.
  4. Place the chicken on the grill and cover. Grill for about 20 minutes, turning frequently, until the chicken reaches an internal temperature of 165°F.
  5. During the last 5 minutes of cooking, brush the drumsticks with some of the sauce, allowing it to caramelize slightly on the grill.
  6. Remove the chicken from the grill and serve with the reserved ½ cup of sauce drizzled over the top.
