Aztec Chicken Grill

 

INGREDIENTS

Approx. Yield: 1 entrée
Chicken breast 8 oz. wt.
Spicelopedia’s Chili Lime Adobo seasoning 4 tsp
Mayonnaise 4 fl. oz.
Sliced red onions 2 oz. wt.
Sliced red, green & yellow bell peppers 4 oz. wt.
Butter 2 Tbsp.
Chopped parsley 1 Tbsp.

STEPS

  1. Season chicken breast on both sides.
  2. Place chicken into a greased sauté pan over medium heat and cook until desired internal temperature is reached. Remove from pan and set aside on a plate.
  3. Add butter to the same sauté pan, then add onions and bell peppers. Sauté over medium heat for about 2 minutes.
  4. Top the cooked chicken breast with the sautéed peppers and onions. Garnish with chopped parsley.
  5. In a small bowl, blend mayonnaise with Spicelopedia’s Chili Lime Adobo seasoning and serve on the side.
