Aztec Chicken Grill
INGREDIENTS
Approx. Yield: 1 entrée| Chicken breast | 8 oz. wt. |
| Spicelopedia’s Chili Lime Adobo seasoning | 4 tsp |
| Mayonnaise | 4 fl. oz. |
| Sliced red onions | 2 oz. wt. |
| Sliced red, green & yellow bell peppers | 4 oz. wt. |
| Butter | 2 Tbsp. |
| Chopped parsley | 1 Tbsp. |
STEPS
- Season chicken breast on both sides.
- Place chicken into a greased sauté pan over medium heat and cook until desired internal temperature is reached. Remove from pan and set aside on a plate.
- Add butter to the same sauté pan, then add onions and bell peppers. Sauté over medium heat for about 2 minutes.
- Top the cooked chicken breast with the sautéed peppers and onions. Garnish with chopped parsley.
- In a small bowl, blend mayonnaise with Spicelopedia’s Chili Lime Adobo seasoning and serve on the side.
