Adobo Grilled Cheese

DESCRIPTION

Adobo Grilled Cheese sandwiches made with Spicelopedia® Chili Lime Adobo seasoning are a flavor-packed twist on a classic comfort food. Thick slices of country white bread are grilled to golden perfection, surrounding layers of sharp white cheddar that melt into rich, savory goodness. Crispy bacon adds satisfying crunch, while marinated red onions bring a zesty kick. A sweet and spicy brown sugar spread balances the heat for a bold, smoky, tangy finish.
 

INGREDIENTS

Servings: 4
Fresh lime juice 2 Tbsp.
Honey 1 tsp.
Olive oil, divided 3 Tbsp.
Spicelopedia® Chili Lime Adobo seasoning 1 tsp.
Fresh cilantro, chopped ½ cup
Small red onion, thinly sliced 1
Adobo sauce 1 Tbsp.
Brown sugar 2 tsp.
Country white bread, thick slices 8 slices
Extra-sharp white cheddar, coarsely grated 8 oz.
Cooked bacon 8 slices

STEPS

  1. In a medium bowl, add the lime juice, honey, 1 tbsp. of the olive oil, and the Spicelopedia® Chili Lime Adobo seasoning. Whisk to combine.
  2. Add the cilantro and red onions to the lime-honey mixture and let them marinate until ready to use.
  3. In a small bowl, add the adobo sauce and brown sugar and whisk to combine.
  4. Brush one side of each slice of bread with the remaining 2 Tbsp. of olive oil.
  5. Build sandwiches by layering ingredients evenly: bread (oiled side out), adobo mixture, cheese, bacon, and the onion-cilantro mixture.
  6. Heat a nonstick skillet over medium-low heat. In batches, add sandwiches to the skillet and cover.
  7. Cook, flipping once, until bread is golden brown and cheese is melted, about 3–4 minutes per side.
