Adobo Grilled Cheese

| Honey | 1 tsp. |
| Olive oil, divided | 3 Tbsp. |
| Spicelopedia™ Chili Lime Adobo seasoning | 1 tsp. |
| Fresh cilantro, chopped | ½ cup |
| Small red onion, thinly sliced | 1 |
| Adobo sauce | 1 Tbsp. |
| Brown sugar | 2 tsp. |
| Country white bread, thick slices | 8 slices |
| Extra-sharp white cheddar, coarsely grated | 8 oz. |
| Cooked bacon | 8 slices |
STEPS
- In a medium bowl, add the lime juice, honey, 1 tbsp. of the olive oil, and the Spicelopedia™ Chili Lime Adobo seasoning. Whisk to combine.
- Add the cilantro and red onions to the lime-honey mixture and let them marinate until ready to use.
- In a small bowl, add the adobo sauce and brown sugar and whisk to combine.
- Brush one side of each slice of bread with the remaining 2 Tbsp. of olive oil.
- Build sandwiches by layering ingredients evenly: bread (oiled side out), adobo mixture, cheese, bacon, and the onion-cilantro mixture.
- Heat a nonstick skillet over medium-low heat. In batches, add sandwiches to the skillet and cover.
- Cook, flipping once, until bread is golden brown and cheese is melted, about 3–4 minutes per side.
