Spicy Port Cranberry Sauce

INGREDIENTS

Servings: 6–8
Fresh orange 1
Fresh cranberries 12 oz.
Dark brown sugar 1 cup
Ruby port wine ½ cup
Cinnamon stick 1
Spicelopedia™ Peri Peri seasoning ¼ tsp.

STEPS

  1. Wash the orange. Use a vegetable peeler to remove the orange peel, then slice the peel into thin strips. Juice the orange and set aside.
  2. Add the orange juice, cranberries, and orange peel strips to a saucepan. Stir in the dark brown sugar, ruby port, Spicelopedia® Peri Peri seasoning, and cinnamon stick.
  3. Simmer the mixture over low heat until the cranberries begin to burst and the sauce thickens, about 20 minutes. Stir occasionally while cooking.
  4. Transfer the cranberry sauce to a bowl and allow it to cool slightly. Remove the cinnamon stick, then cover and refrigerate until ready to serve.
