INGREDIENTS

Servings: 4
Campari or plum tomatoes, halved 3 lbs
Spicelopedia® Italian Lemon Pepper seasoning 3 Tbsp (divided)
Balsamic vinegar (high quality) ¼ cup
Extra virgin olive oil ⅛ cup
Dry white wine ¼ cup
Tomato paste 2 Tbsp

STEPS

  1. Preheat the oven to 375°F.
  2. Arrange the tomatoes in a single layer on a foil-lined baking sheet, cut side up.
  3. Sprinkle with half of the Spicelopedia® Italian Lemon Pepper seasoning, then drizzle with balsamic vinegar and olive oil.
  4. Bake for 1 hour, then remove from the oven and allow to cool.
  5. Peel and discard the skins from the tomatoes.
  6. Transfer the tomatoes to a sauce pot and add the white wine, tomato paste, and remaining seasoning.
  7. Bring to a boil, then reduce heat and simmer for about 1 hour, stirring occasionally.
