INGREDIENTS
Servings: 4| Campari or plum tomatoes, halved | 3 lbs |
| Spicelopedia® Italian Lemon Pepper seasoning | 3 Tbsp (divided) |
| Balsamic vinegar (high quality) | ¼ cup |
| Extra virgin olive oil | ⅛ cup |
| Dry white wine | ¼ cup |
| Tomato paste | 2 Tbsp |
STEPS
- Preheat the oven to 375°F.
- Arrange the tomatoes in a single layer on a foil-lined baking sheet, cut side up.
- Sprinkle with half of the Spicelopedia® Italian Lemon Pepper seasoning, then drizzle with balsamic vinegar and olive oil.
- Bake for 1 hour, then remove from the oven and allow to cool.
- Peel and discard the skins from the tomatoes.
- Transfer the tomatoes to a sauce pot and add the white wine, tomato paste, and remaining seasoning.
- Bring to a boil, then reduce heat and simmer for about 1 hour, stirring occasionally.
