Lemon Herb Grilled Swordfish

INGREDIENTS

| Olive oil | ½ cup |
| Spicelopedia® Italian Lemon Pepper seasoning | 1 Tbsp |
| Fresh oregano, minced | 2 tsp |
| Fresh thyme, minced | 2 tsp |
| Large garlic cloves, crushed (optional) | 2 |
STEPS
- In a stainless steel bowl or glass dish, whisk together the olive oil, Spicelopedia® Italian Lemon Pepper seasoning, oregano, thyme, and crushed garlic if using.
- Add the swordfish steaks and marinate for 30 minutes to 1 hour. This marinade can also be used for grilled summer vegetables such as zucchini, yellow squash, and bell peppers.
- Prepare the grill for high direct heat and clean the grill grates thoroughly. Lightly oil the grates to prevent sticking.
- Remove the swordfish from the marinade and lightly pat dry with paper towels to remove excess marinade.
- Place the swordfish steaks on the hot grill grates and cook for 5–7 minutes on the first side, until grill marks form.
- Turn the steaks over and continue grilling for a few more minutes, until the fish reaches an internal temperature of 140–145°F and is just cooked through.
- Remove from the grill and let rest for a few minutes before serving.
- If grilling vegetables, cook just until grill marks appear on each side.
