Latin Chicken and Sausage with Pearl Couscous

 
 

INGREDIENTS

Servings: 4
Boneless, skinless chicken breast, cut into 1½” pieces 2 (6 oz.)
Spicy Italian sausage, cut into 1½” pieces 2 (4 oz.)
Spanish onion, cut into ½” strips 1 medium
Spicelopedia™ Chili Lime Adobo spice 2 tsp
Pearl couscous (cooked in chicken broth) For 4 servings
Honey 1 tsp
Olive oil ¼ cup
Salted butter 1 Tbsp

STEPS

  1. Prepare couscous in chicken broth according to package directions. Drain and set aside.
  2. In a stainless steel or glass bowl, combine chicken, sausage, onions, 2 Tbsp olive oil, and seasoning. Toss until evenly coated.
  3. Heat a 10-inch skillet over medium-high heat. Add 2 Tbsp olive oil and butter and allow to melt.
  4. Once butter begins to sizzle, add chicken, sausage, onion, and seasoning mixture. Sauté for about 25 minutes, stirring often, until proteins are fully cooked.
  5. If needed, add a small amount of chicken broth during cooking to prevent sticking.
  6. Add cooked couscous and honey. Stir until everything is well combined and evenly distributed.
