Keto Avocado and Bacon Egg Cups

 
 

INGREDIENTS

Servings: 2–4
Avocados 2 large
Eggs 4 large
Bacon 4 slices
Spicelopedia Chili Lime Adobo with Chipotle seasoning 2 Tbsp
Fresh chives or parsley (optional garnish)

STEPS

  1. Preheat oven to 375°F (190°C).
  2. Cut avocados in half and remove pits. Scoop out a small portion of flesh to create a well for the egg.
  3. Cook bacon until crisp, then chop into pieces.
  4. Place avocado halves on a baking sheet.
  5. Carefully crack one egg into each avocado half.
  6. Top with chopped bacon and season with chili lime adobo seasoning (plus salt and pepper if desired).
  7. Bake for 12–15 minutes, or until eggs are set to your preferred doneness.
  8. Garnish with fresh chives or parsley and serve warm.
