Butternut Squash Mac and Cheese seasoned with Spicelopedia™ Southwest Zesty Fiesta seasoning is a delightful fusion of creamy comfort and bold, southwestern flavors. The smooth, velvety butternut squash blends seamlessly with the rich, cheesy sauce, creating a cozy, autumn-inspired dish. INGREDIENTS
Servings: 4| Butternut squash, cubed | 3 cups |
| Macaroni, shell, or bow tie pasta (dry) | 3 cups |
| 2% milk | ½ cup |
| Spicelopedia® Southwest Zesty Fiesta seasoning | 1 Tbsp. |
| Shredded cheddar cheese blend | 1 cup |
| Shredded mozzarella cheese | ½ cup |
| Butter | 2 Tbsp. |
STEPS
- Preheat the oven to 350°F. Add the cubed butternut squash to a pot of water, bring to a boil, then reduce to a simmer. Cook for about 10 minutes, or until the squash is tender.
- While the squash is cooking, or in the same pot after removing the squash, cook the pasta according to the package directions. Drain well.
- Combine the cooked squash, milk, Spicelopedia® Southwest Zesty Fiesta seasoning, and shredded cheddar cheese blend in a food processor or blender. Blend until smooth and creamy.
- Fold the cooked pasta into the cheese sauce and transfer the mixture to a baking dish. Bake for about 25 minutes.
- Switch the oven to broil. Remove the baking dish, sprinkle the mozzarella cheese over the top, and dot with the butter. Return to the oven and broil until the cheese is melted, bubbly, and lightly browned.
