INGREDIENTS

Servings: 4
Light olive oil 1 Tbsp.
Pre-diced tomato trinity (tomato, green bell pepper, onion) 1 cup
Ground turkey 1 lb.
Cola 1 cup
Spicelopedia® Southwest Zesty Fiesta seasoning ¼ cup
Black beans, drained and rinsed 15.5 oz. can
Diced tomatoes with lime, cilantro, and green chiles 10 oz. can
Water (optional, for a saucier chili) ¼ cup

STEPS

  1. Add olive oil and tomato trinity to a Dutch oven or soup pot. Sauté for about 3 minutes.
  2. Add ground turkey and cook until browned, breaking it apart as it cooks.
  3. Deglaze the pan with cola, scraping up any browned bits from the bottom.
  4. Stir in seasoning, black beans, diced tomatoes with lime, cilantro, and green chiles, and water (if using).
  5. Bring to a boil, then reduce heat to a simmer. Cover and cook for 20–25 minutes, stirring once during cooking.
