Steak Fajita Filling
INGREDIENTS
Approx. Yield: 50 × 5–6 oz. portions| Skirt steak, ½” strips | 12 lbs. |
| Onion | 3 lbs. |
| Green & red bell pepper | 3 lbs. |
| Spicelopedia’s Chile Lime Adobo seasoning | ½ cup + 2 TB |
| Vegetable oil | ¼ cup + 2 TB |
| Lime juice | ¼ cup + 2 TB |
STEPS
- In a small non-metal bowl, combine ¼ cup oil and ¼ cup lime juice. Pour over steak and mix well to coat.
- Add seasoning to the steak and mix until evenly combined.
- In a separate bowl, combine remaining oil and lime juice. Pour over onions and bell peppers and mix to coat.
- Add remaining seasoning to vegetables and mix until evenly distributed.
- Spread steak and vegetables onto two separate large sheet trays.
- Bake at 400°F for 10 minutes, or until steak reaches about 140°F (medium).
- Gently toss with tongs, then place under broiler for 30 seconds to 1 minute until lightly charred.
- Transfer to a serving dish and serve hot.
