Italian Sausage with Onion and Bell Peppers

 

INGREDIENTS

Approx. Yield: 50 portions
Cooked Italian sausage, cut into quarters 50 sausages
Spicelopedia’s Southwest Zesty Fiesta seasoning ¼ cup
Canola oil 1 TB
Yellow onion 4 lbs.
Red bell pepper, sliced 2 lbs.
Green bell pepper, sliced 2 lbs.

STEPS

  1. In a large mixing bowl, combine bell peppers and onion with oil. Toss until evenly coated.
  2. Add seasoning to the vegetables and mix until fully incorporated.
  3. Transfer to a 400°F convection oven and cook for 15 minutes, or until vegetables are nearly tender.
  4. Remove from the oven, add sausage, and mix to combine. Return to the oven and cook for an additional 5–7 minutes, or until vegetables are fully cooked.
