Italian Sausage with Onion and Bell Peppers
INGREDIENTS

| Spicelopedia’s Southwest Zesty Fiesta seasoning | ¼ cup |
| Canola oil | 1 TB |
| Yellow onion | 4 lbs. |
| Red bell pepper, sliced | 2 lbs. |
| Green bell pepper, sliced | 2 lbs. |
STEPS
- In a large mixing bowl, combine bell peppers and onion with oil. Toss until evenly coated.
- Add seasoning to the vegetables and mix until fully incorporated.
- Transfer to a 400°F convection oven and cook for 15 minutes, or until vegetables are nearly tender.
- Remove from the oven, add sausage, and mix to combine. Return to the oven and cook for an additional 5–7 minutes, or until vegetables are fully cooked.
